Bok Choy with Lemongrass and Chilli Butter

Serves: 4, as a side

Ingredients:

  • 75g Western Star Butter, softened
  • 1-2 red chillies, seeded and finely chopped
  • 1 tablespoon finely chopped fresh lemongrass
  • 4 bok choy, halved, washed and blanched
  • 1/3 cup coriander, chopped

Method:

Melt butter in a wok or large frypan, add chilli and lemongrass and cook until just fragrant.

Toss in bok choy and coriander and cook until bok choy is tender but still crisp.

Cooking Time: 5 minutes

Hints:

If using large bok choy, cut into quarters before cooking.
