Mustard and Herb Butter, Ham and Roasted Capsicum Sandwiches

Serves: 2 sandwiches

Ingredients:

  • 2 tablespoons Western Star Spreadable Butter
  • 2 tablespoons finely chopped fresh herbs (basil, parsley and chives work well)
  • 2 teaspoons wholegrain mustard
  • freshly ground black pepper, to taste
  • 4 slices light rye or sourdough bread
  • 1/2 cup rocket leaves
  • 4 thin slices smoked ham
  • 1/2 cup roasted red capsicum strips

Method:

Combine butter, herbs, mustard and pepper to taste. Spread lightly over each slice of bread.

Top two slices of bread with rocket, ham and capsicum strips, sandwich with remaining bread. Serve sandwiches immediately or refrigerate for 1-2 hours until required.

Cooking Time: 10 minutes

Hints:

Try using rare roast beef in this sandwich.

Mustard and Herb Butter can be kept refrigerated for up to 1 week.
Use leftover to dollop on cooked meats or as a sandwich spread.
