Lemon Butter Curd
Ingredients:
- 2 large lemons, juiced and grated
- 125g Western Star butter
- 200g sugar
- 3 eggs lightly whisked
Method:
Place Western Star butter, sugar, lemon juice and zest into a saucepan over medium heat. Stir until sugar has dissolved. Remove from heat, add eggs that have been lightly whisked, stir well and return to low heat until the mixture thickens. Pour into a bowl, and place in the fridge to cool.
