Strawberry and Date Butter Cookies
Serves: 36 cookies
Ingredients:
- 375g Western Star unsalted butter
- 1 cup icing sugar, sifted
- 3 cups plain flour, sifted
- 1 teaspoon vanilla extract
- 15-18 medium fresh strawberries
- 9 medium to large California fresh dates, pitted and cut into quarters
- Pure icing sugar
Method:
Cream butter and sugar in a food processor until light and creamy.
Gradually blend in 1 cup of sifted flour thoroughly at a time.
Add vanilla extract and mix well.
Place in a bowl, cover and chill for 15 minutes. Preheat oven to 180°C.
Makes about 36, 20g small balls, approximately 3cm in diameter. Place strawberries and dates individually in the centre of each ball, wrap biscuit dough around the filling.
Place onto greased biscuit trays, allowing about 4cm space between each ball.
Return to refrigerator and chill for further 15 minutes.
Bake in oven for 20 - 25 minutes.
Cool on wire rack, then dust with icing sugar.
