Luscious Lemon Teacake
Serves: 6
Ingredients:
- 1 cup self raising flour
- 1/2 cup castor sugar
- 60g Western Star Butter
- 1, 70g egg, lightly beaten
Filling:
- 1/4 cup lemon juice
- 1/2 cup castor sugar
- 1, 70g egg
- 60g Western Star Butter
Method:
Combine all the filling ingredients in a saucepan. Stir constantly over a low heat until the mixture boils and thickens. Set aside to cool slightly.
Preheat oven to 180ºC.
Brush a 20cm shallow round sandwich cake pan with some extra melted butter. Line the base with baking paper.
Sift the flour and sugar into a bowl, combine well. Gently rub in butter until the mixture resembles fine bread crumbs.
Make a well in the centre, stir in beaten egg to form a soft dough. You may need to add a dash of water to form the right consistency.
Press 2/3 of the dough into the base of the cake pan. Pour the lemon filling over the base, then generously crumble the remaining dough over the filling.
Bake in preheated oven for approximately 30 minutes.
Hints:
Serve warm, dusted with icing sugar and a dollop of lovely fresh cream.
