Flavoured Butters
Ingredients:
- 125g Western Star Butter, softened
Savoury Variations
Garlic & Herb
- 2 cloves garlic, crushed
- 2 tablespoons chopped fresh herbs
Lime, Ginger & Chilli
- finely grated rind of 1 small lime
- 2 teaspoons grated fresh ginger
- 1 small red chilli, finely chopped
Caper, Mustard and Chive
- 2 teaspoons baby capers, finely chopped
- 2 teaspoons seeded mustard
- 2 tablespoons freshly snipped chives
Sweet Variations
Coconut and Lime
- 1 tablespoon toasted desiccated coconut
- 1 tablespoon icing sugar
- ½ teaspoon coconut essence
- finely grated rind of 1 small lime
Lemon Maple
- finely grated rind of ½ lemon
- 1 tablespoon maple syrup
- 1 tablespoon icing sugar
Spiced Honey
- 2 teaspoons honey
- 1 teaspoon mixed spice
- 2 teaspoons icing sugar
Method:
Using a fork, mash preferred flavour variation into butter until evenly combined and smooth.
Roll into a cylinder using baking paper or foil and refrigerate or freeze until required.
To use, cut slices off the log of flavoured butter and add to steamed vegetables or grilled steak.
Hints:
Use Western Star Salted Butter for savoury variations and Western Star Unsalted or Continental Unsalted Butter for the sweet variations.
Add a slice of savoury flavoured butter to: grilled meat, stuff under chicken skin before roasting, use to panfry seafood, stir into risottos, pasta or steamed vegetables. Perfect for herb or garlic bread.
Sweet flavoured butters are delicious served on waffles, muffins, pancakes, toast and brushed onto baked goods, fresh out of the oven.
