Barbecued Chicken Skewers with Orange and Ginger Butter
Serves: 4
Ingredients:
- 2 large chicken breast fillets, each cut into 5 long strips
- 10 x bamboo or metal skewers
- Olive oil for spraying
- 100g Western Star Butter
- 1 clove garlic, finely chopped
- 1 teaspoon finely grated ginger
- finely grated rind and juice of 1 orange
- 1 teaspoon sugar
- 1/4 cup coriander leaves
- Crisp salad, for serving
Method:
Thread each chicken strip onto a skewer, spray with oil and grill until cooked through. Keep warm.
Melt butter in a small frypan add garlic, ginger and orange rind, sauté until fragrant, add orange juice and sugar, whisk to combine. Boil for 30 seconds before adding coriander and immediately pouring over chicken. Serve with salad.
