Garlic Buttered Prawns with Tomato and Coriander
Serves: 6 as an entree or tapas style dish
Ingredients:
- 80g Western Star Butter
- 3 cloves garlic, crushed
- 500g green prawns, peeled and deveined
- 1 small red chilli, finely sliced (optional)
- 2 tomatoes, finely chopped
- finely grated rind and juice of 1 lime
- 1/2 cup torn coriander leaves
Method:
Melt butter in a large frypan over medium-high heat until foamy, add garlic, chilli, and prawns cook tossing for 2 minutes until almost cooked through.
Add tomatoes, lime juice and zest and coriander, cook, tossing for 1 minute.
Serve prawns immediately in the pan with fresh bread or tortillas and let guests help themselves.
Hints:
As the prawns will be served in the frypan, use a decorative frypan or stove-proof dish to cook the prawns in. Alternatively transfer the prawns to a warm serving dish.
Ask for pre-peeled and deveined green prawns from your local fish monger or supermarket.
