BBQ Chilli Lime Prawns
Serves: 4 as an entree
Ingredients:
- ½ cup lime juice
- 2 tablespoons fish sauce
- 2 tablespoons chopped coriander
- 3 cloves garlic, finely chopped
- 2 small red chillies, seeds removed and sliced
- 1½ teaspoons sugar
- 20 large green prawns
- 60g Western Star Butter, melted
- 2 limes halved
Method:
Combine lime juice, fish sauce, coriander, garlic, chillies and sugar in a large bowl. Peel the shell from the tail portion of each prawn. Mix prawns with the lime marinade.
Cook prawns quickly on a hot grill for 2-3 minutes each side, basting liberally with butter. Grill lime halves, cut side down for 3 minutes. Serve lime alongside prawns.
