Chicken Saltimbocca Skewers

Serves: 12

Ingredients:

  • 12 chicken tenderloins
  • 50g Western Star Butter, melted
  • 1 clove crushed garlic
  • 12 sage leaves
  • 12 long and thin slices prosciutto, cut in half lengthways

Method:

  1. Coat each tenderloin in combined butter and garlic mixture, and place a sage leaf on each. Wrap each tenderloin with a slice of prosciutto.
  2. Heat a heavy based non stick frypan until hot and pan fry or BBQ tenderloins until cooked through.
  3. Insert a skewer through each tenderloin prior to serving.

Cooking Time: Prep: 15 minutes, Cooking Time: 10-12 minutes

Hints:

A delicious pre dinner appetiser or lunch idea when served with a simple spinach salad

Tip: Chicken can be assembled and refrigerated up to a day ahead, prior to cooking.
