Spaghettini with Smashed Buttery Peas

Ingredients:

  • 50g Western Star Butter
  • 1 large onion, chopped
  • 2 cloves garlic, crushed
  • 300g grated zucchini
  • 1 1/2 cups frozen peas, thawed
  • 500g spaghettini* pasta
  • 1 1/4 cups shredded Perfect Italiano Parmesan Cheese
  • freshly ground black pepper, to taste
  • extra shredded Perfect Italiano Parmesan Cheese, for serving

Method:

Melt butter in a large non stick saucepan and sauté onion and garlic for 2 minutes, until fragrant.

Add zucchini and peas and sauté for a further minute. Reduce heat, cover and simmer for 15 minutes, stirring occasionally until mixture is quite soft and mushy.

Cook pasta in boiling salted water until al dente. Drain.

Add cheese and hot pasta to sauce and stir until well coated.

Serve immediately, sprinkled with pepper and additional cheese.
