Buttered Smoked Chicken and Asparagus Sandwiches

These dainty sandwiches are great for an afternoon tea or picnic.

Serves: 2 sandwiches

Ingredients:

  • 1 tablespoon Western Star Spreadable Butter
  • 1 tablespoon finely chopped fresh chives
  • freshly ground black pepper, to taste
  • 4 slices white bread
  • 4 fresh asparagus, trimmed and blanched
  • 100g smoked chicken breast, finely sliced

Method:

Combine Western Star Spreadable Butter, chives and pepper. Spread each slice of bread with butter mixture.

Cut the asparagus in half lengthwise and crosswise, arrange over two slices of buttered bread and top with smoked chicken slices. Sandwich together with the remaining buttered bread, then cut into triangles to serve.
