Creamy Scrambled Eggs with Smoked Salmon

Serves: 2

Ingredients:

  • 4 Eggs, lightly beaten
  • 1/3 cup thickened cream
  • 2 tablespoons chopped chives
  • 2 tablespoons chopped parsley
  • salt and pepper
  • 40g Western Star Butter
  • 4 slices of crusty bread or 4 crumpets
  • 50g sliced smoked salmon

Method:

Place eggs, cream, chives, parsley, salt and pepper into a bowl. Beat lightly with a fork until almost smooth. Melt butter in a frypan. Pour egg mixture into pan. Over a medium-high heat gently stir eggs until almost set. Remove from heat.

Toast bread or crumpets until golden, top with scrambled eggs and curls of smoked salmon.
