Warm 'Spanakopita' Muffins
Serves: 12
Ingredients:
- 150g Western Star Butter, melted
- 1 cup chopped spring onions
- 1/2 cup chopped fresh mint
- 2 teaspoons dried oregano
- 250g frozen spinach, thawed & lightly squeezed to remove excess liquid
- 2 cups self raising flour
- 200g Australian feta cheese, crumbled
- 3 eggs, lightly beaten
- 3/4 cup milk
- Western Star Butter, extra, softened, for serving
Method:
- Melt butter in a saucepan and sauté spring onions, mint and oregano for 2 minutes. Cool slightly. Stir in spinach.
- Add spinach mixture to flour with remaining ingredients and stir well until just combined.
- Spoon mixture into well buttered muffin pans.
- Bake at 200°C for 25 minutes or until golden and cooked. Serve warm with extra butter.
Cooking Time: Prep: 10 minutes, Cooking Time: 20 minutes

These muffins are a delicious accompaniment served with hot pumpkin soup.
Muffins are best made and enjoyed on the same day, however they can also be refreshed by heating in a microwave.
