Sweet Flavoured Butters
Serves: 1/2 cup butter
Ingredients:
Cinnamon and honey butter
- 125g Western Star unsalted butter, softened
- 1 tablespoon honey
- 1 teaspoon cinnamon
Mint and lime butter
- 125g Western Star unsalted butter, softened
- 1/4 cup finely shredded mint
- zest of 1 lime
- 1/4 cup icing sugar, sifted
Lemon sugar pancake butter
- 125g Western Star unsalted butter, softened
- rind of 1 lemon
- 2 teaspoons lemon juice
- 1/4 cup caster sugar
Hazelnut and chocolate butter
- 125g Western Star unsalted butter, softened
- 1 tablespoon cocoa powder
- 1/4 cup icing sugar
- 1/4 cup ground hazelnuts
Method:
- Beat butter in an electric mixer until light and fluffy, add flavour variations and continue beat until well incorporated.
- Use immediately, or scoop butter onto a sheet of baking paper, roll the baking paper squashing the butter to form a log, wrap in plastic and refrigerate until firm.
- To use, cut a slice of butter from the log try the following:
- Melt over pancakes
- Panfry or roast with fresh fruit
- Spread on crumpets, toast, scones, brioche
- Add a little extra flavour to anything that normally uses butter!
